Recipe for Spinach Artichoke Dip:
-- One 10 oz. package of chopped spinach, cooked in microwave for 5 minutes.
-- Two 13 3/4 oz. cans of artichoke hearts, finely chopped (best if done with food processor).
-- One-half cup mayo.
-- One-half cup sour cream.
-- One cup of Parmesan cheese, grated.
-- One cup pepper jack cheese, grated.
** Preheat oven to 350 degrees.
** Grease large casserole dish.
** In a large bowl, combine all ingredients but the pepper jack cheese. Stir with metal spoon.
** Sprinkle on pepper jack cheese.
** Place in casserole dish.
** Bake 30 minutes.
** Serve with chips (keep warm while serving).
